Chicken Quesadillas
Enjoy this with salsa, a piece of fresh fruit and low-fat milk or fortified soy milk for lunch. You can also invite a friend over for an after school snack.

| 2 | large whole wheat tortillas | 2 |
| 1/4 cup | grated cheese, any type | 50 mL |
| 1/4 cup | diced cooked chicken (leftovers work great) | 50 mL |
Directions
- Place one tortilla in a non-stick skillet or frying pan on medium heat.
- Spread cheese and chicken evenly over the tortilla.
- Cover with second tortilla.
- Cook on each side for 1-2 minutes. Turn over with a spatula.
- Remove from pan. Let cool.
- Cut into wedges with a pizza cutter.
Serves 1 lunch or 2 snacks
