Chicken Quesadillas

Enjoy this with salsa, a piece of fresh fruit and low-fat milk or fortified soy milk for lunch. You can also invite a friend over for an after school snack.

Ingredients
Quantity
(Imperial)
Ingredient Quantity (Metric)
2 large whole wheat tortillas 2
1/4 cup grated cheese, any type 50 mL
1/4 cup diced cooked chicken (leftovers work great) 50 mL
Directions
  1. Place one tortilla in a non-stick skillet or frying pan on medium heat.
  2. Spread cheese and chicken evenly over the tortilla.
  3. Cover with second tortilla.
  4. Cook on each side for 1-2 minutes. Turn over with a spatula.
  5. Remove from pan. Let cool.
  6. Cut into wedges with a pizza cutter.

Serves 1 lunch or 2 snacks
